Palak Chicken Kofta
I gave palak paneer a twist by replacing the paneer with tender ground chicken koftas for a heartier, equally delicious variation.
If you ask both my kids what their favorite Indian dish is, they won’t even pause—it’s always palak paneer. It’s been that way since they were little, and even now, whenever they come home from college, it’s one of the first things they ask for. I’ve gotten into the habit of picking up a box of baby spinach and paneer from Costco before they arrive.
One time, I decided to change things up a bit and swapped the paneer for ground chicken koftas, with a few small tweaks. I wasn’t sure how it would go over—but to my surprise, everyone loved it just as much. It’s now one of those variations that feels just as welcome at the table.
